Vegetable Talumein soup is a quite filling and nutritious soup with noodles and a variety of veggies. Make sure not to overcook the vegetables in order to retain the crunch.

Ingredients
Carrot 20 gms
Bok choy 20 gms
Beans 10 gms
Cabbage 20 gms
Broccoli 20 gms
Boiled Sweet corn 15gms
Mushrooms 10 gms
Boiled Noodles 100 gms
Spring onions chopped 10 gms
Soy Sauce 10 ml
Refined oil 5 ml
Vegetable stock 800 ml
Salt and black pepper powder to taste
Sugar to taste
Vegetable Aromat powder 5gms
Directions
- Slice the vegetables thinly into desired shapes.
- Heat 5 ml oil in a wok, add broccoli , carrot, cabbage, mushrooms, beans, bok choy and saute the veggies for 3 – 5 minutes.
- Add boiled sweet corn and mix it well.
- Add the vegetable stock and soy sauce. Season with sugar, salt and vegetable aromat powder.
- Cook on medium heat for 4-6 minutes. Add black pepper and mix well.
- To serve, put the boiled noodles in the bowl and pour the soup over it, garnish with chopped spring onions and enjoy!
Chef’s Twist :-
Add edamame, tofu or chicken to make it a complete meal.
