Apple Rabdi

Rabdi, a classic Indian dish, typically made in North India, is a milk based dessert. This recipe for Apple Rabdi has milk, that is boiled till it reduces to half, to which sugar and grated apples are added and cooked. Condensed milk makes it more creamy, the saffron strands add colour and flavour, and the aroma of the cardamom in the dish elevates it to the next level. The almonds and cashews add texture to the otherwise creamy dish. A perfect recipe that will be loved by elders and kids!!

Ingredients

  • Apples 4 nos.

  • Milk 1 litre

  • Milkmaid or Any Other Condensed Milk 40 gms

  • Sugar 60 gms

  • Almonds sliced for garnish

  • Cashews chopped for garnish

  • Saffron a few strands

  • Cardamom powder 3-4 gms

Directions

  • Boil the milk in a heavy bottom pan until it is reduced to half the quantity.
  • Wash and grate the apples.
  • Add sugar and the grated apples to the reduced milk and simmer over low flame.
  • When the apples are cooked and soft, add the condensed milk and cook again for 10 more minutes.
  • Add the sliced almonds, chopped cashews, saffron strands and cardamom powder to the mixture.
  • Stir well and remove from the flame.
  • Serve hot or cold.

Chef’s Twist :-

Use soya milk or almond milk for a vegan version.
