Classic Veg Burger

Presenting to you – An absolutely vegetarian burger patty made with a variety of vegetables and Indian spices. The burger patties are loaded with fibre from all the vegetables and feature an irresistible combination of spices. The mixture of vegetables and spices are shaped into patties and dipped in slurry followed by bread crumbs before being deep fried. Assemble the bun with a spread of mayo, the patties, cheese and tomatoes. One bite into the burger and everyone will be begging for more, carnivores included!

Ingredients

  • For the Vegetable patty
  • Carrot 80 gms

  • French Beans 80 gms

  • Green Peas 80 gms

  • Potato 120 gms

  • Ginger-Garlic paste 10 gms

  • Onions chopped 30 gms

  • Green chillies 5gms chopped

  • Coriander Leaves chopped 20gms

  • Red Chilli powder 5 gms

  • Garam Masala 10 gms

  • Cumin powder 10 gms

  • Coriander powder 5 gms

  • Salt to taste

  • Black Pepper crushed to taste

  • Refined Flour 80 gms

  • Bread Crumbs 100 gms

  • Oil 10 ml for patty and for deep frying

  • For assembling the burger
  • Sesame Buns 2

  • Romaine Lettuce 60 gms

  • Mayonnaise 30 gms (You can use eggless mayonnaise if you are vegetarian)

  • Tomato sliced 20 gms

  • Onions sliced 20gms

  • Cheese slices 4 nos.

  • Butter for spreading

Directions

  • For Vegetable patty
  • Boil the potatoes and green peas, mash and keep aside. Finely chop the carrots and beans.
  • Heat a pan, add 10 ml oil. Add chopped green chillies, ginger-garlic paste and chopped onions and saute till translucent. Add chopped carrots and chopped beans. Add salt, cumin powder, coriander powder, garam masala, red chilli powder and crushed black pepper. Saute and cook till the carrots and beans are cooked. Add mashed potato and green peas. Mix well.
  • Cook for another 15 minutes on medium heat stirring constantly. Finish with coriander leaves. Check the seasoning and add more of salt , black pepper and spice powders if required.
  • Using the mixture make round size patties same as the size of the buns. If the mixture looks soft or crumbly, then add some breadcrumbs and mix everything again very well. Cover the patties and keep aside.
  • Prepare a batter using refined flour, salt and water. The batter should be smooth and without any lumps.
  • Heat oil for frying the veg patties in a deep pan. When the oil becomes medium hot, dip the veg patty in the batter. Coat evenly and place the batter coated patty in the bread crumbs.
  • Crumb well . Deep fry the patties over medium heat until crisp. Remove the deep fried patties into paper towel to remove excess oil.
  • Assembling the burger
  • Slice the burger buns into half, spread some butter and toast on a hot tawa till golden brown.
  • Now spread the mayonnaise dip on to the toasted sides. Arrange the romaine lettuce, sliced onion and sliced tomato on top of it.
  • Place the vegetable patty on it. Top it with a dash of mayonnaise and cheese slice. Place the top part of the buns. Toast in an oven if you prefer. This will help melt the cheese a bit.
  • Serve the burgers immediately with some tomato ketchup. You can also serve some french fries or potato wedges or potato chips along with the burger.

Chef’s Twist :-

Use paav bread instead of sesame buns, spread green chutney and sprinkle chaat masala for a traditional Indian taste.
