Don’t be deceived by the simple looks of this dish. The simplest of all pasta recipes with just four basic ingredients, spaghetti pasta, garlic, red chilli flakes and extra virgin olive oil, and you get a tasty pasta. The secret is to saute the garlic till it is golden-brown, to get it’s full flavour, and not burn it. The perfect recipe for a novice to impress your loved ones.

Ingredients
Spaghetti 500 gms
Garlic chopped 40 gms
Red chilli flakes 10 gms
Extra virgin Olive oil 20 ml
Parmesan cheese grated 10 gms
Parsley chopped for garnish
Salt to taste
Directions
- Fill a large vessel with water and let it boil. Add salt.
- Boil the spaghetti pasta. The pasta should be tender but still firm to the bite. The stage is called ‘al dente’ in Italian. Drain and keep the pasta and water aside. Let it cool for some time.
- Heat olive oil, add chopped garlic and saute for 3-5 minutes. It’s very important that the garlic doesn’t burn.
- Add red chilli flakes and salt . Add a ladle of the starchy pasta water.
- When the water boils, add the cooked pasta and toss it continuously until it is evenly coated in the garlic sauce. If the sauce looks a bit too dry, add in another ladle of the starchy pasta water. Check the seasoning.
- To serve, garnish with grated parmesan and chopped parsley. Drizzle a dash of extra virgin olive oil. Serve with crispy garlic bread.
Chef’s Twist :-
Traditionally, this Italian recipe is made using peperoncini (red hot chilli peppers), so absolutely use them if you find them fresh or pickled. Banana peppers are a great substitute.
