A crispy snack, the Aloo Matar Ki Tikki is a patty made of mashed potatoes and green peas, shallow fried on a pan. It is a perfect starter to any meal or a great accompaniment to evening tea. The stuffed raisins offer a pleasant surprise to this otherwise spicy appetizer. Chuck it between two buttered burger buns with chutneys spread, to get an Indian burger. The patty can also be prepared without the peas and made as plain Aloo Tikki, which can be used to make Ragada Pattice (see recipe in this section). So make sure you prepare some extra aloo tikkis to make delicious ragada pattice.

Ingredients
Boiled Potatoes 100 gms (Should be dry and not over cooked)
Boiled Peas 100 gms
Ginger Paste 10 gms
Green Chilli Paste 10 gms
Raisins 30 gms
Salt to taste
Corn Flour 50 gms
Chat Masala 5 gms
Asafoetida (Hing ) 5 gms
Coriander Leaves 10 gms
Ghee for Frying
- Masala for the tikki
Coriander Seeds 5 gms
Black Pepper 5 gms
Whole Jeera 5 gms
Directions
- Dry roast coriander seeds, black pepper and jeera. This helps to remove excess moisture and releases volatile oils and increases the fragrance of the spices. Grind them into a coarse mixture using a mortar and pestle.
- Mash the potatoes and green peas separately and mix them together.
- Add the cornflour, ginger paste, green chilli paste, chat masala powder, asafoetida, salt, chopped coriander leaves and the ground roasted spices.
- Divide into equal balls and flatten them into round shape.
- Stuff the flattened tikkis with raisins and shape into thick discs. Keep them in the refrigerator for half an hour.
- Sprinkle some corn flour on the tikkis and shallow fry on medium heat in ghee until crisp from outside.
- Transfer them into a paper tissue to remove excess oil.
- Serve them hot with Saunth chutney and Mint chutney (See the Condiments section for recipes) or Tomato Ketchup.
Chef’s Twist :-
Try the combination of raw bananas and paneer cubes for proteins instead of potatoes and peas. Yam can also be used with paneer to give a different, but delicious tikki, beware if you are allergic to yam!
